Lipoxygenase (LOX) Literature Review

Lipoxygenase is a non-heme iron enzyme which catalyzes the incorporation of an oxygen molecule into the carbon chain of polyunsaturated fatty acids that contain a cis,cis-1,4-pentadiene moiety. It has been studied for over 50 years and is the subject of a recent review by Nanda and Yadav (2003). In this review, they mostly focused on the effect of the substrate on the enzymatic reaction. I would like to review the work that has been done using this enzyme in terms of stability and specificity, since scientists have started to use non-conventional media for biocatalysis.
